The Royal Wedding of Prince Harry and Ms. Meghan Markle is this Saturday, May 19th, and millions across the world are set to tune in to watch all the pomp and circumstance. Broadcasts stateside begin as early as 4am EST with the ceremony to begin at 7am EST!
Seven am is a bit too early to pop champagne bottles and indulge in treats, so why not prepare a fabulously British breakfast? While you sip on a cuppa English Breakfast tea, you can make mini tea sandwiches, fresh strawberries with (coconut) cream, and a (plant based) coronation salad. Have you ever had coronation salad? Fun Fact: It was originally prepared for Queen Elizabeth’s coronation in 1953 as a twist on a traditional chicken salad. It was seasoned with curry powder to give a nice kick. Modern versions include flaked almonds, raisins, and even crème fraiche. Our plant based version includes Japanese sweet potatoes, which provide a sweet touch, and a cashew cream curry dressing, which packs lots of flavor.
